Chaya
Chaya [Cnidoscolus Chayamansa] has been used
as food for thousands of years, Chaya is far more
nutritious than most leafy vegetables, and
contains about twice the nutrition of
Alfalfa,[sometimes called the father of all
foods]Chaya is one of the best live foods on the
planet.
According to the National Institute of Nutrition
in Mexico City

Ingesting Chaya will--
Improve blood circulation
Help Digestion--
Improve Vision
Dis inflame veins and Hemorrhoids
Help lower Cholesterol
Help reduce weight
Prevent Coughs
Augment Calcium in bones
De congest Lungs
Prevent anemia by replacing Iron in the blood
Improve memory and brain function
Combat Arthritis, and Diabetes

Note, --Chaya contains Cyanide in small
amounts and some people recommend cooking
it. I eat it raw and see no problem with this, but if
you want to eat large amounts of Chaya [over 6
oz at one meal] I also recommend boiling it for 3
min.
Do not cook Chaya in aluminum cook ware, the
Toxic chemical reaction can cause Diarrhea.
Some kinds of Chaya have stinging hairs and
cannot be eaten raw, the Chaya I have does not
have these.

Using Chaya,
Chaya can be used instead of lettuce in any dish,
or instead of Spinach. Chaya is mild flavored so
does not alter the flavor of dishes it is added to
very much. Add Chaya  to
Salads,Salsas,Casseroles ,sauces, anything you
want to.
Cooking Chaya will make it tougher so cook the
young leaves, --or if cooking older leaves cook
long and slow.
Chaya Tea
add 3-5 medium size leaves to a gallon of tea,
add what ever black tea you want and some mint,
and set it out in the sun to "cook"for a few
hours, then refrigerate it until used.
