Seminole Pumpkin Squash
[C. moschata]

This Squash was grown by the Seminole Indians
in the 1500s.
*It keeps for a year at room temperature.
*About 7 inches in diameter
*Resistant to vine borers
*Sweeter than Butternut.
*Dark Orange flesh with tan skin.
*Perfect size for meal for two.
* Perfect for hot humid southern gardens.

The amazing thing about this Squash is its
production, and keeping quality. It spreads and
puts down more root every place the vine touches
the soil,[with adequate moisture] so one vine can
spread to fill the whole garden [if you let it] it will
grow like crazy for most of the summer and it will
out run the borers once established and growing
well , It will make a lot of little squash. Start eating
them while green, [it is like summer squash], - This
is one of the better tasting winter squash in my
opinion.
This Squash will keep until you can grow
more
.

I was told
as a child that if you had Squash stored for  winter
food, it would keep you healthy till the spring
garden was ready.
I survived all one winter in Montana, 60 miles from
town, eating Winter Squash, Potatoes, and
hunting. I did not get sick or run down, but felt
good all winter.























Tilpia Stuffed Squash, -[also good with Sausage
in the cavity] , bake for 1 to 2 hours at 350 -400
deg.  Depending on size of Squash [7 inch
squash will cook in 1 hour]

















also very good canned, and makes wonderful
soup, just mash up canned squash, add some
milk, salt, pepper,[chicken broth if you have it, but
not important] warm up and sprinkle with cheese
just before serving, --














I like to add a little butter, to the cavity, and then put a
Tilapia Fillet in,- then put it in a pan, -cover if you don't
want the top of the fish a little crispy, - cook for an hour
for little Squash and longer for big ones, -stick a fork in it
to tell if it is done, [soft]  after it is cooked taste it and
add some salt and pepper if you want,
This is hard to beat for a good tasting and good for you
meal, -- 1/2 of a 7 inch Squash is just right for a hungry
person , [invite a friend , and cook both halves]
