Edible Xanthosoma,
Malanga, Yautia, Tannier Spinach.
I have , White Malanga, Purple Malanga
[Xanth, saggitifolium] and Tannier
Spinach, [Xanth brasiliense]
Tannier Spinach is supposedly edible raw, but I can't
eat anything but the very young leaves without getting
the "itch". The Itch is a mouth and throat irritation
from the Calcium crystals that are in the plant so bugs
wont eat it.[cooking destroys the Calcium crystals
getting rid of the "itch"] I eat the very young leaves
when they first appear [before they unroll
themselves,] in salads, --everyone has different
tolerance to the Calcium crystals, So-- when eating
this for the first time just try a little and see if it
irritates your throat.
Tannier Spinach, [Xanthosoma brasiliense]
The Xanthosoma have edible root corms, they are
larger than most potatoes and can be prepared
like the Potato,Yam, Taro, or Canna. They
produce a group of offsets from the main plant
and these can be dug up anytime during the fall or
winter and cooked and eaten, --they are quite
good in flavor and very filling.
To prepare the corm for eating, wash all the dirt
off, then scrub it with a stiff bristle brush, this
removes the skin also, --then bake, boil, or deep
fry, the corm, --it is especially good added to
stew, and soup.
